an hour after midnight and the house is silent. a great time for reflection. a time for hope, for dreams and for being so very thankful. thankful for a cozy home to sleep in, a caring family that makes all the hard work worthwhile, amazing friends to lean on and so very grateful to live in this country with freedom. happy new year! remember all those who are less fortunate or are giving up their freedom so we can enjoy ours.
I searched high + low to find a recipe for the green punch that I thought sounded good without the use of koolaid or jello. I had saw on tv a green punch but it never gave out an exact recipe so I made up my own and thought I’d share it with you.
(this make a lot, but u can divide it for a smaller batch)
12 kiwis peeled+quartered
2 cups mint leaves
6 limes juiced+zest of 3
2 1/2 cups simple syrup
1 bartlett pear peeled and cored
2 2 liter bottles ginger ale
lime green sherbet (if desired)
for simple syrup place 2 1/2 cups of sugar in a sauce pan over a medium high burner. add an equal amount of water. stir until all sugar is dissolved. and syrup has reduced a bit. let cool.
purée kiwis, mint, lime juice and zest, pear, and simple syrup. I processed this in two batches because my blender could not hold it all. then poured into a pitcher and held in the fridge until party time but it’s bright green color will fade the longer it sits.
to serve I poured half of the purée and one bottle of ginger ale then dotted with scoops of sherbet. delish!
